3-2-1 Waffles

About a year ago, I lost a lot of weight following Weight Watchers.  I totally love Weight Watchers, by the way. Easy to do and effective. But that’s not the point of this story.

While I was on WW, I was always in search of delicious recipes with low point values.  And I came across 3-2-1 Microwave Cake.  Basically, you combine an angel food cake mix with a regular cake mix of your choice (I like cherry cake mix) and put it in a bag in your pantry. When you’re in need of a sweet treat, you put 3 tablespoons of the cake mix and 2 tablespoons of water mixed together in a coffee mug for 1 minute.  It’s zero points on WW, which only “sweetens” the deal. Get it? Get it?

I mixed together my cake mixes and put them in the pantry a while ago and had really kind of forgotten about it. So, the other morning, my son wanted waffles and I was looking in the pantry, trying to decide between cornmeal and flour-based waffles when I spotted the mix and wondered if it would work.

It did – and the results were amazing.  Again, the recipe is the same…three parts mix, two parts water and into the waffle iron it goes. I used about double of what you use for the cake, but that’s still only about 1 point on WW+.
